No meat, no worries – these are the easiest nachos you’ve ever slapped together

For all you adventure junkies, whether you’re conquering rugged terrains or setting up a serene spot in the middle of the wilderness, there’s always the question: ‘What to eat?’
Enter the ultimate campfire dish: Loaded Campfire Nachos. Not only are they a crowd-pleaser, but they’re also delightfully simple and quick to whip up. In under 30 minutes, you can have a mouth-watering dish, piled high with crunchy nachos, melty cheese, and a medley of vibrant toppings. Ingredients:
- Tortilla chips
- 1 can black beans, drained and rinsed
- 1 large tomato, diced
- 1 small red onion, finely chopped
- 1-2 jalapeños, sliced (depending on how much kick you want)
- Shredded cheese (your choice, but cheddar or Monterey Jack works wonders)
- Fresh coriander, chopped
- Sour cream (or Greek yogurt for a healthier twist)
- 1 lime, cut into wedges
Instructions:
- Prep your campfire so it’s got a nice, steady flame going. If you’ve got a grill grate, even better. If not, no stress, just rake a small bed of coals off to the side.
- In a cast-iron Dutch oven or any campfire-proof dish you have on hand, lay down a base of tortilla chips.
- Sprinkle a generous amount of black beans, diced tomatoes, chopped onions, and jalapeños over the chips.
- Slap on a hearty handful (or three) of shredded cheese.
- If you’re feeling fancy, you can layer it up! Add another layer of chips and toppings until your skillet is looking full and mighty tasty.
- Place the skillet over the coals. If you’re a gear junky now’s the time to talk yourself into a campfire tripod to suspend your dutch-oven above the flames.
- Cook those nachos for about 10-15 minutes, or until the cheese is all melty and golden. Keep an eye on it; don’t let those chips burn!
- Once done, pull it off the fire (carefully!), and sprinkle some fresh coriander over the top. Squeeze a bit of lime, and dollop on some sour cream.
- Dive in while it’s hot!
